A simple and healthy one pan meal featuring lemon herb salmon and zucchini.
Ingredients

- 2 salmon fillets
- 2 medium zucchinis, sliced
- 1 lemon, juiced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix olive oil, lemon juice, garlic, thyme, salt, and pepper.
- Place salmon and zucchini on a baking sheet.
- Pour the herb mixture over the salmon and zucchini.
- Bake for 15-20 minutes until salmon is cooked through.
- Serve immediately.
