Ingredients

  • 500 grams (1 pound) boneless, skinless chicken breasts, sliced into strips
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Tortillas, for serving (flour or corn)

Instructions

  1. Prepare the chicken and vegetables by slicing the chicken breasts and washing and slicing the bell peppers and onion.
  2. In a large bowl, combine the sliced chicken with olive oil and all the spices. Toss until well-coated.
  3. Heat a large cast-iron skillet over medium-high heat and add the seasoned chicken. Cook for about 5-7 minutes until browned and cooked through, then set aside.
  4. In the same skillet, add the sliced bell peppers and onion. Sauté for about 5 minutes until tender and slightly caramelized.
  5. Return the cooked chicken to the skillet, stir everything together, and cook for an additional 2-3 minutes. Garnish with fresh cilantro and serve with lime wedges and warm tortillas.

  • For a vegetarian option, substitute chicken with hearty vegetables like portobello mushrooms and zucchini.
  • Feel free to adjust spice levels by adding more chili powder or serving hot sauce on the side.
