A simple and flavorful one pan Cajun sausage and rice skillet recipe.
Ingredients

- 1 pound Cajun sausage, sliced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 bell pepper, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1 can diced tomatoes, undrained
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sausage and cook until browned, about 5 minutes.
- Add onion, bell pepper, and garlic; sauté until softened.
- Stir in rice and Cajun seasoning; cook for 2 minutes.
- Add chicken broth and diced tomatoes; bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
- Fluff rice with a fork and serve warm.

- Use any sausage you prefer.
