- 200 grams of digestive biscuits (or graham crackers)
- 100 grams of unsalted butter, melted
- 400 grams of cream cheese, softened
- 100 grams of powdered sugar
- 200 ml of heavy cream
- 1 teaspoon of vanilla extract
- 300 grams of fresh strawberries, hulled and sliced
- 100 grams of strawberry jam
- 1 tablespoon of lemon juice
Instructions
- Prepare the crust by crushing the digestive biscuits and mixing with melted butter. Press into a lined 9×9 inch baking dish and refrigerate for 30 minutes.
- Make the cheesecake filling by beating softened cream cheese, adding powdered sugar, vanilla extract, and lemon juice until smooth.
- Pour the cheesecake filling over the chilled crust and smooth the top. Refrigerate for at least 4 hours until firm.
- Prepare the strawberry topping by heating sliced strawberries and strawberry jam in a saucepan until the jam melts. Let cool, then pour over the cheesecake layer and refrigerate for an additional 30 minutes.
