A delicious no bake carrot cake that is vegan and gluten free.
Ingredients

- 2 cups grated carrots
- 1 cup almond flour
- 1/2 cup shredded coconut
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup walnuts, chopped
- 1/4 cup raisins
Instructions
- In a bowl, mix grated carrots, almond flour, and shredded coconut.
- Add maple syrup, melted coconut oil, cinnamon, nutmeg, and salt. Mix well.
- Stir in chopped walnuts and raisins.
- Press the mixture into a lined cake pan.
- Refrigerate for at least 2 hours to set.
- Slice and serve cold.
Notes
- Store leftovers in the fridge for up to a week.
- Feel free to add other nuts or dried fruits.
