Description

A delicious no bake carrot cake that is vegan and gluten free.


Ingredients

  • 2 cups grated carrots
  • 1 cup almond flour
  • 1/2 cup shredded coconut
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup walnuts, chopped
  • 1/4 cup raisins

Instructions

  1. In a bowl, mix grated carrots, almond flour, and shredded coconut.
  2. Add maple syrup, melted coconut oil, cinnamon, nutmeg, and salt. Mix well.
  3. Stir in chopped walnuts and raisins.
  4. Press the mixture into a lined cake pan.
  5. Refrigerate for at least 2 hours to set.
  6. Slice and serve cold.
