Description

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add garlic and mushrooms. Sauté until mushrooms are tender.
  6. Stir in spinach and cook until wilted.
  7. Combine cooked quinoa with mushroom and spinach mixture.
  8. Season with salt and pepper. Serve warm.
