Description

A flavorful mushroom and brown rice pilaf dish.


Ingredients

  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add mushrooms and cook until softened.
  4. Stir in brown rice and thyme, cooking for 1 minute.
  5. Add vegetable broth, salt, and pepper.
  6. Bring to a boil, then reduce heat and cover.
  7. Simmer for 40-45 minutes until rice is tender.
  8. Fluff with a fork and serve.
