Description

Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon cinnamon
  • 1 teaspoon turmeric
  • 4 carrots, sliced
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and minced garlic, sauté until soft.
  3. Season chicken thighs with salt and pepper, then add to the skillet.
  4. Brown chicken on both sides.
  5. Stir in cumin, coriander, paprika, cinnamon, and turmeric.
  6. Add sliced carrots and chicken broth.
  7. Bring to a boil, then reduce heat and cover.
  8. Simmer for 30 minutes until chicken is cooked through.
