Ingredients

  • Beef: 1 kg (2.2 lbs) of beef chuck or stew meat, cut into 2-inch chunks.
  • Olive Oil: 2 tablespoons.
  • Onion: 1 large onion, finely chopped.
  • Garlic: 3 cloves, minced.
  • Spices: Ground cumin, coriander, cinnamon, ginger, paprika, and cayenne pepper.
  • Diced Tomatoes: 1 can (400g), drained.
  • Beef Broth: 2 cups.
  • Dried Apricots: 200g (about 1 cup), halved.
  • Carrots: 2 medium, sliced.
  • Red Bell Pepper: 1, chopped.
  • Chickpeas: 1 can (400g), drained and rinsed.
  • Salt and Pepper: To taste.
  • Cilantro: Fresh, for garnish.
  • Couscous or Rice: For serving.

Instructions

  1. Gather all your ingredients and prepare them.
  2. In a large tagine or heavy-bottomed pot, heat olive oil and brown the beef chunks.
  3. Add chopped onion and sauté until soft, then add minced garlic.
  4. Add spices and toast for 2 minutes, then return the beef to the pot.
  5. Add diced tomatoes, beef broth, apricots, carrots, and bell pepper, and stir well.
