Description

Moist Apple Date Molasses Cake with Hot Sauce

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup diced apples (about 2 medium apples)
  • 1 cup pitted dates, chopped
  • 1/2 cup hot sauce (for serving, adjust to taste)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
  3. In a large mixing bowl, use an electric mixer to cream the softened butter and brown sugar together until light and fluffy, about 3-5 minutes.
  4. Beat in the molasses, eggs, and vanilla extract until well combined.
  5. Gradually add the dry ingredient mixture to the wet mixture, mixing until just combined. Be careful not to overmix.
  6. Gently fold in the diced apples and chopped dates until evenly distributed throughout the batter.
  7. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  10. Once cooled, slice the cake and serve it on a plate. Drizzle with hot sauce on the side for a unique flavor combination. Enjoy!

Notes

  • For added flavor, consider adding chopped nuts or a sprinkle of chopped ginger to the batter.
  • Adjust the amount of hot sauce based on your spice preference; serve it on the side for guests to add as they like.
  • This cake can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
