Description

Mini meatloaf muffins topped with creamy mashed potato frosting.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 small onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups mashed potatoes
  • 2 tablespoons butter
  • 1/4 cup sour cream
  • 1/4 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic powder, salt, and pepper.
  3. Shape the mixture into muffins in a greased muffin tin.
  4. Bake for 25 minutes or until cooked through.
  5. While baking, prepare mashed potatoes with butter and sour cream.
  6. Once meatloaf muffins are done, let them cool for a few minutes.
  7. Top each muffin with mashed potatoes and sprinkle cheese if desired.
