- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1 small onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups mashed potatoes
- 2 tablespoons butter
- 1/4 cup sour cream
- 1/4 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic powder, salt, and pepper.
- Shape the mixture into muffins in a greased muffin tin.
- Bake for 25 minutes or until cooked through.
- While baking, prepare mashed potatoes with butter and sour cream.
- Once meatloaf muffins are done, let them cool for a few minutes.
- Top each muffin with mashed potatoes and sprinkle cheese if desired.
Notes
- Use lean ground beef for a healthier option.
- You can add vegetables to the meat mixture for more flavor.
- Store leftovers in the refrigerator for up to 3 days.
