Description

Ingredients

  • 200g mixed dried fruit
  • 100g unsalted butter
  • 100g brown sugar
  • 2 eggs
  • 150g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 100g marzipan
  • 100g icing sugar

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a saucepan, melt the butter and sugar together.
  3. Remove from heat and stir in the dried fruit.
  4. Add eggs one at a time, mixing well after each.
  5. Sift in flour, baking powder, and cinnamon. Mix until combined.
  6. Pour the mixture into mini cake tins.
  7. Bake for 20-25 minutes or until a skewer comes out clean.
  8. Let cakes cool before decorating with marzipan and icing sugar.
