Description

Mini chocolate cheesecakes are rich, creamy desserts perfect for chocolate lovers.


Ingredients

  • 1 cup chocolate cookie crumbs
  • 1/4 cup butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup chocolate chips, melted

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Combine cookie crumbs and melted butter in a bowl.
  3. Press the mixture into the bottom of mini cupcake liners.
  4. In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing after each addition.
  6. Stir in melted chocolate chips.
  7. Pour the cream cheese mixture over the crusts.
  8. Bake for 20-25 minutes or until set.
  9. Cool completely and refrigerate for at least 2 hours before serving.
