Mini chai muffins topped with a vanilla bean glaze.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground chai spice
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
- 1 tablespoon milk (for glaze)
- 1/2 teaspoon vanilla bean paste
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, baking powder, baking soda, salt, and chai spice.
- In another bowl, whisk milk, oil, egg, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Fill mini muffin cups about 2/3 full.
- Bake for 12-15 minutes or until a toothpick comes out clean.
- Let muffins cool.
- For the glaze, mix powdered sugar, milk, and vanilla bean paste until smooth.
- Drizzle glaze over muffins before serving.

- Store muffins in an airtight container.
- These muffins freeze well.
- You can adjust the spice level to your preference.
