A rich and creamy cheesecake with a midnight berry flavor.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup mixed berries (blueberries, raspberries, blackberries)
- 1/4 cup berry puree
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter.
- Press the mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each.
- Stir in vanilla extract and berry puree.
- Pour the cream cheese mixture over the crust.
- Top with mixed berries.
- Bake for 55-60 minutes.
- Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
- Use fresh berries for the best flavor.
- Let the cheesecake chill overnight for improved texture.
- Serve with additional berry sauce if desired.
