Description

A fresh and flavorful Mexican-inspired poke bowl.


Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1/2 pound sashimi-grade tuna, diced
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup corn kernels
  • 1/4 cup black beans, rinsed
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, combine rinsed rice and water. Bring to a boil, then reduce heat and cover. Cook for 20 minutes.
  3. Remove from heat and let it sit, covered, for 10 minutes.
  4. In a bowl, combine tuna, lime juice, soy sauce, salt, and pepper. Mix well.
  5. Fluff the rice with a fork and divide it into serving bowls.
  6. Top rice with tuna mixture, avocado, cherry tomatoes, red onion, corn, and black beans.
  7. Garnish with cilantro.
