A fresh and flavorful Mexican-inspired poke bowl.
Ingredients

- 1 cup sushi rice
- 1 1/4 cups water
- 1/2 pound sashimi-grade tuna, diced
- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup corn kernels
- 1/4 cup black beans, rinsed
- 2 tablespoons lime juice
- 2 tablespoons soy sauce
- 1 tablespoon cilantro, chopped
- Salt and pepper to taste
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- In a pot, combine rinsed rice and water. Bring to a boil, then reduce heat and cover. Cook for 20 minutes.
- Remove from heat and let it sit, covered, for 10 minutes.
- In a bowl, combine tuna, lime juice, soy sauce, salt, and pepper. Mix well.
- Fluff the rice with a fork and divide it into serving bowls.
- Top rice with tuna mixture, avocado, cherry tomatoes, red onion, corn, and black beans.
- Garnish with cilantro.

- Use fresh ingredients for the best flavor.
- Feel free to add other toppings like jalapeños or radishes.
