- 4 medium sweet potatoes
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork.
- Bake sweet potatoes for 45-60 minutes until tender.
- In a bowl, combine quinoa, tomatoes, cucumber, onion, feta, olives, olive oil, lemon juice, salt, and pepper.
- Once sweet potatoes are done, let them cool slightly.
- Slice each sweet potato lengthwise and fluff the inside with a fork.
- Stuff the sweet potatoes with the quinoa mixture.
- Serve warm and enjoy.

- You can use any type of olives you prefer.
