Description

Mediterranean Stuffed Sweet Potatoes are a healthy and flavorful dish. They combine the sweetness of baked sweet potatoes with savory Mediterranean ingredients.


Ingredients

  • 4 medium sweet potatoes
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork.
  3. Bake sweet potatoes for 45-60 minutes until tender.
  4. In a bowl, combine quinoa, tomatoes, cucumber, onion, feta, olives, olive oil, lemon juice, salt, and pepper.
  5. Once sweet potatoes are done, let them cool slightly.
  6. Slice each sweet potato lengthwise and fluff the inside with a fork.
  7. Stuff the sweet potatoes with the quinoa mixture.
  8. Serve warm and enjoy.
