Description
Mediterranean Quesadillas are a delicious blend of Mediterranean flavors wrapped in crispy tortillas.
Ingredients

- 4 tortillas
- 1 cup feta cheese, crumbled
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup olives, sliced
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Place one tortilla in the skillet.
- Layer feta cheese, spinach, sun-dried tomatoes, olives, and mozzarella on half of the tortilla.
- Fold the tortilla in half and cook until golden brown, about 3-4 minutes.
- Flip and cook the other side until golden brown.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve warm.
Notes
- You can add grilled chicken for extra protein.
- Serve with tzatziki sauce for dipping.
- Store leftovers in an airtight container in the refrigerator.
