Description

Mediterranean Quesadillas are a delicious blend of Mediterranean flavors wrapped in crispy tortillas.


Ingredients

  • 4 tortillas
  • 1 cup feta cheese, crumbled
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup olives, sliced
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Place one tortilla in the skillet.
  3. Layer feta cheese, spinach, sun-dried tomatoes, olives, and mozzarella on half of the tortilla.
  4. Fold the tortilla in half and cook until golden brown, about 3-4 minutes.
  5. Flip and cook the other side until golden brown.
  6. Repeat with remaining tortillas and filling.
  7. Cut into wedges and serve warm.

Notes

  • You can add grilled chicken for extra protein.
  • Serve with tzatziki sauce for dipping.
  • Store leftovers in an airtight container in the refrigerator.
