Ingredients
- Whole wheat tortillas: 4 large
- Canned chickpeas: 1 can (15 oz), drained and rinsed
- Cucumber: 1 medium, diced
- Cherry tomatoes: 1 cup, halved
- Red bell pepper: 1 medium, diced
- Red onion: 1/4 cup, finely chopped
- Fresh parsley: 1/4 cup, chopped
- Feta cheese: 1/2 cup, crumbled
Instructions
- Prepare the chickpeas by rinsing them under cold water and letting them drain.
- Chop the cucumber, cherry tomatoes, red bell pepper, red onion, and parsley.
- Mix the dressing by combining olive oil, lemon juice, salt, and pepper in a small bowl.
