Description

Mediterranean Chickpea Salad in Jars is a nutritious dish combining fresh vegetables, protein-rich chickpeas, and tangy feta cheese, perfect for meal prep.


Ingredients

  • Chickpeas: One can (15 oz)
  • Cherry Tomatoes: One cup, halved
  • Cucumber: One cup, diced
  • Feta Cheese: Half a cup, crumbled
  • Red Onion: A quarter cup, finely chopped
  • Fresh Parsley: A quarter cup, chopped
  • Olive Oil: A quarter cup
  • Lemon Juice: Two tablespoons
  • Dried Oregano: One teaspoon
  • Salt and Pepper: To taste

Instructions

  1. Prepare the chickpeas by combining drained and rinsed chickpeas with a pinch of salt and pepper.
  2. Chop the vegetables: dice cucumber, halve cherry tomatoes, and finely chop red onion and parsley.
  3. Make the dressing by whisking together olive oil, lemon juice, dried oregano, and a pinch of salt and pepper.
  4. Layer the ingredients in jars starting with chickpeas, followed by cucumber, cherry tomatoes, and feta cheese.
