A flavorful Mediterranean chicken orzo dish packed with herbs and vegetables.
Ingredients

- 2 cups orzo pasta
- 1 pound chicken breast, diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon oregano
- 1 teaspoon basil
- Salt and pepper to taste
- 1/4 cup feta cheese, crumbled
Instructions
- Cook orzo according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken and cook until browned.
- Stir in onion and garlic, cooking until softened.
- Add bell pepper and zucchini, cooking for 5 minutes.
- Add cherry tomatoes, oregano, basil, salt, and pepper. Cook for another 5 minutes.
- Mix in cooked orzo and stir to combine.
- Top with feta cheese before serving.
Notes
- Feel free to add your favorite vegetables.
- Can substitute chicken with shrimp or tofu for a different protein.
