Description

A flavorful Mediterranean chicken orzo dish packed with herbs and vegetables.


Ingredients

  • 2 cups orzo pasta
  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • Salt and pepper to taste
  • 1/4 cup feta cheese, crumbled

Instructions

  1. Cook orzo according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add diced chicken and cook until browned.
  4. Stir in onion and garlic, cooking until softened.
  5. Add bell pepper and zucchini, cooking for 5 minutes.
  6. Add cherry tomatoes, oregano, basil, salt, and pepper. Cook for another 5 minutes.
  7. Mix in cooked orzo and stir to combine.
  8. Top with feta cheese before serving.
