Description
A fresh and healthy Mediterranean bean salad packed with flavor.
Ingredients

- 1 can of chickpeas, rinsed and drained
- 1 can of black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large bowl, combine chickpeas, black beans, tomatoes, cucumber, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Let the salad sit for at least 15 minutes to allow flavors to meld.
- Serve chilled or at room temperature.
Notes
- This salad can be made a day ahead.
- Store leftovers in the refrigerator for up to 3 days.
- Add feta cheese for extra flavor.
