- 1 pound ground chicken
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes (14.5 ounces)
- 2 cups chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and bell pepper, sauté until softened.
- Stir in garlic and cook for 1 minute.
- Add ground chicken, cooking until browned.
- Mix in diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Bring to a boil, then stir in orzo.
- Reduce heat, cover, and simmer for 10-12 minutes until orzo is tender.
- Garnish with fresh parsley before serving.
Notes
- Adjust seasoning to your taste.
- Can substitute ground turkey if desired.
- For added heat, include red pepper flakes.
