Description

Maple glazed sweet potato donuts are a delightful twist on a classic treat, combining the natural sweetness of sweet potatoes with the rich flavor of maple syrup.

Ingredients

  • Sweet potatoes: 1 cup, mashed (about 1 medium sweet potato)
  • All-purpose flour: 1 ½ cups
  • Baking powder: 2 teaspoons
  • Ground cinnamon: 1 teaspoon
  • Ground nutmeg: ½ teaspoon
  • Brown sugar: ¾ cup, packed
  • Eggs: 2 large
  • Milk: ½ cup
  • Maple syrup: ¼ cup
  • Salt: ½ teaspoon
  • Vegetable oil: for frying (about 4 cups)

For the maple glaze:

  • Powdered sugar: 1 cup
  • Maple syrup: 2 tablespoons
  • Milk: 1-2 tablespoons (to reach desired consistency)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare the sweet potatoes by baking them until tender.
  2. In a large bowl, whisk together the dry ingredients: flour, baking powder, cinnamon, nutmeg, brown sugar, and salt.
  3. In another bowl, mix the wet ingredients: eggs, mashed sweet potato, milk, and maple syrup.
  4. Combine the wet and dry ingredients gently until just mixed.
  5. Heat vegetable oil in a deep skillet to 350°F (175°C) for frying or preheat your oven to 350°F (175°C) for baking.
  6. Shape the donuts using a cutter or piping bag and fry or bake them until cooked through.
  7. Prepare the maple glaze by whisking together powdered sugar, maple syrup, and milk.
  8. Dip the cooled donuts in the glaze and allow to set on a wire rack.

Notes

  • Choose firm, smooth sweet potatoes for the best flavor.
  • Be careful not to overmix the batter to ensure fluffy donuts.
  • Consider using organic sweet potatoes for a healthier option.
  • Experiment with different spices or glazes for unique flavors.
