Ingredients

- Fresh thyme: 2 teaspoons.
Instructions
- Preheat your oven to 425°F (220°C).
- Peel the fresh carrots and cut them into uniform pieces, about 2 to 3 inches long.
- In a large mixing bowl, combine the pure maple syrup, olive oil, sea salt, black pepper, and fresh thyme. Whisk until well blended.

- Roast the carrots in the preheated oven for about 25 to 30 minutes, stirring halfway through, until tender and caramelized.
