- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1 cup brown sugar, packed

- 2 large eggs

- 1/2 cup maple syrup
- 1/2 teaspoon salt
- 1/2 cup powdered sugar (for glaze)
- 2 tablespoons maple syrup (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt.
- In a large mixing bowl, combine the pumpkin puree, brown sugar, eggs, vanilla extract, and maple syrup. Mix until smooth.
- Gradually add the dry ingredient mixture to the wet ingredients and stir gently until just combined.
- Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes until the edges are lightly golden and the centers look set. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- In a small bowl, whisk together the powdered sugar and 2 tablespoons of maple syrup until smooth to make the glaze.
- Once the cookies are completely cooled, drizzle the maple glaze over the tops of each cookie.
