Description

Delightful soft and chewy cookies bursting with pumpkin flavor and topped with a sweet maple glaze.


Ingredients

  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup brown sugar, packed
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup maple syrup
  • 1/2 teaspoon salt
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons maple syrup (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt.
  3. In a large mixing bowl, combine the pumpkin puree, brown sugar, eggs, vanilla extract, and maple syrup. Mix until smooth.
  4. Gradually add the dry ingredient mixture to the wet ingredients and stir gently until just combined.
  5. Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes until the edges are lightly golden and the centers look set. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  7. In a small bowl, whisk together the powdered sugar and 2 tablespoons of maple syrup until smooth to make the glaze.
  8. Once the cookies are completely cooled, drizzle the maple glaze over the tops of each cookie.
