Description

A hearty bowl featuring chicken, sweet potatoes, and a tangy maple dijon sauce.


Ingredients

  • 2 chicken fillet
  • 2 medium sweet potatoes, diced
  • 2 tablespoons maple syrup
  • 1 tablespoon dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix maple syrup, dijon mustard, olive oil, salt, and pepper.
  3. Toss the diced sweet potatoes in half of the sauce.
  4. Place sweet potatoes on a baking sheet and roast for 25 minutes.
  5. While the sweet potatoes roast, coat the chicken fillet with the remaining sauce.
  6. In a skillet, cook the chicken over medium heat for 6-7 minutes on each side until fully cooked.
  7. Serve the chicken on top of the roasted sweet potatoes.
  8. Garnish with fresh parsley.

Notes

  • Adjust the sweetness by adding more or less maple syrup.
  • Substitute chicken with tofu for a vegetarian option.
