- 2 chicken fillet
- 2 medium sweet potatoes, diced
- 2 tablespoons maple syrup
- 1 tablespoon dijon mustard
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix maple syrup, dijon mustard, olive oil, salt, and pepper.
- Toss the diced sweet potatoes in half of the sauce.
- Place sweet potatoes on a baking sheet and roast for 25 minutes.
- While the sweet potatoes roast, coat the chicken fillet with the remaining sauce.
- In a skillet, cook the chicken over medium heat for 6-7 minutes on each side until fully cooked.
- Serve the chicken on top of the roasted sweet potatoes.
- Garnish with fresh parsley.
Notes
- Adjust the sweetness by adding more or less maple syrup.
- Substitute chicken with tofu for a vegetarian option.
- Store leftovers in the refrigerator for up to 3 days.
