Ingredients

  • All-purpose flour: 3 cups (360 g)
  • Active dry yeast: 2 ¼ teaspoons (1 packet)
  • Milk: 1 cup (240 ml), warmed
  • Granulated sugar: ¼ cup (50 g)
  • Unsalted butter: ¼ cup (60 g), melted
  • Ground cinnamon: 2 teaspoons
  • Maple syrup: ½ cup (120 ml)
  • Eggs: 2 large
  • Powdered sugar: 1 cup (120 g), for glaze
  • Additional maple syrup: 2-3 tablespoons, for glaze
  • Salt: ½ teaspoon

Instructions

  1. Activate the yeast by mixing warmed milk with granulated sugar and sprinkling yeast on top. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add melted butter, eggs, and the frothy yeast mixture. Mix until a dough forms.
  3. Prepare the cinnamon filling by mixing ground cinnamon with maple syrup to create a smooth paste.
  4. Once the dough has risen, punch it down and roll it out into a rectangle. Spread the cinnamon-maple paste evenly over the dough.
  5. Tightly roll the dough into a log and cut it into bite-sized pieces. Place on a greased baking sheet.
  6. Cover the pieces and let them rise for another 30 minutes. Preheat the oven to 350°F (175°C).
  7. Bake the bites for 15-20 minutes until golden brown.
  8. Prepare the glaze by whisking powdered sugar and additional maple syrup until smooth. Drizzle over warm bites.
