- 1 ripe mango, diced

Instructions
- Prepare the marinade by whisking together olive oil, lime juice, lime zest, honey, garlic powder, onion powder, salt, and black pepper.
- Marinate the chicken in the mixture for at least 30 minutes, or up to 2 hours.
- Preheat the grill and cook the chicken for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
- Prepare the rice by boiling jasmine rice with water or chicken broth, then simmer for 15 minutes and let it sit covered for 5 minutes.
- Assemble the bowl by placing rice at the base, topping it with sliced grilled chicken, diced mango, red bell pepper, and cucumber.
- Garnish with fresh cilantro and serve with lime wedges.
