Description

The Mango Lime Chicken Bowl is a delightful dish that combines juicy grilled chicken with fresh, vibrant ingredients, topped with diced mango, red bell pepper, and cucumber, served over jasmine rice.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb or 450 g)
  • 2 tablespoons olive oil
  • 2 limes (juice and zest)
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup jasmine rice (or rice of your choice)
  • 1 3/4 cups water or chicken broth (for cooking rice)
  • 1 ripe mango, diced
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Prepare the marinade by whisking together olive oil, lime juice, lime zest, honey, garlic powder, onion powder, salt, and black pepper.
  2. Marinate the chicken in the mixture for at least 30 minutes, or up to 2 hours.
  3. Preheat the grill and cook the chicken for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
  4. Prepare the rice by boiling jasmine rice with water or chicken broth, then simmer for 15 minutes and let it sit covered for 5 minutes.
  5. Assemble the bowl by placing rice at the base, topping it with sliced grilled chicken, diced mango, red bell pepper, and cucumber.
  6. Garnish with fresh cilantro and serve with lime wedges.
