Description

A tropical twist on the classic Tres Leches Cake, featuring the flavors of mango and coconut for a refreshing dessert.


Ingredients

  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup whole milk
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup coconut milk
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 cup toasted coconut flakes
  • 1 ripe mango, peeled and sliced for topping

Instructions

  1. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  2. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  3. Gradually add the flour mixture to the butter mixture, alternating with the whole milk, mixing until just combined. Pour the batter into a prepared baking pan and bake for 25-30 minutes.
  4. While the cake cools, whisk together the evaporated milk, sweetened condensed milk, and coconut milk in a large bowl.
  5. Once the cake has cooled, poke holes all over the top and pour the milk mixture over it. Cover and refrigerate for at least 4 hours or overnight.
  6. Before serving, beat the heavy whipping cream and powdered sugar until stiff peaks form. Spread the whipped cream over the cake, sprinkle with toasted coconut flakes, and arrange fresh mango slices on top.

Notes

  • For added flavor, consider adding a splash of rum or coconut extract.
  • Fresh mint leaves can be used for garnish.
