- 2 cups diced chicken breast
- 1 ripe mango, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 can coconut milk (400ml)
- 2 tablespoons curry powder
- 1 tablespoon vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan over medium heat.
- Add onions, garlic, and ginger. Sauté until onions soften.
- Add diced chicken and cook until browned.
- Stir in curry powder and cook for 1 minute.
- Add coconut milk and mango. Simmer for 15 minutes.
- Season with salt and garnish with cilantro before serving.
