- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 4 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup fresh strawberries, pureed
- 1/4 cup sour cream
- 1/4 cup all-purpose flour
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter.
- Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth.
- Add vanilla extract and eggs, one at a time, mixing well after each.
- Stir in pureed strawberries, sour cream, and flour until combined.
- Pour the cheesecake batter over the crust in the pan.
- Bake for 60-70 minutes or until the center is set.
- Let it cool, then refrigerate for at least 4 hours before serving.
Notes
- Use ripe strawberries for better flavor.
- You can top with fresh strawberries or strawberry sauce.
- Store leftovers in the fridge for up to 5 days.
