Description

A simple low carb fried rice recipe made with cauliflower.


Ingredients

  • 1 medium head of cauliflower, riced
  • 2 tablespoons of sesame oil
  • 2 eggs, beaten
  • 1 cup of mixed vegetables (peas, carrots, bell peppers)
  • 3 green onions, chopped
  • 3 tablespoons of soy sauce
  • Salt and pepper to taste

Instructions

  1. Rice the cauliflower using a food processor or grater.
  2. Heat sesame oil in a large skillet over medium heat.
  3. Add the mixed vegetables and sauté for 3-4 minutes.
  4. Push the vegetables to the side and pour in the beaten eggs. Scramble until cooked.
  5. Add the riced cauliflower to the skillet and mix well.
  6. Stir in soy sauce, salt, and pepper.
  7. Cook for another 5-7 minutes, stirring occasionally.
  8. Garnish with chopped green onions before serving.
