Description

A classic Louisiana dish featuring red beans and rice, flavorful and hearty.


Ingredients

  • 1 pound red beans
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 smoked sausage, sliced
  • 1 bay leaf
  • 1 teaspoon thyme
  • 4 cups chicken broth
  • 2 cups cooked rice
  • Salt and pepper to taste

Instructions

  1. Soak the red beans overnight in water.
  2. Drain and rinse the beans.
  3. In a large pot, sauté onion, bell pepper, celery, and garlic until soft.
  4. Add the sausage and cook for a few minutes.
  5. Add the beans, bay leaf, thyme, and chicken broth.
  6. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  7. Remove bay leaf and adjust seasoning with salt and pepper.
  8. Serve over cooked rice.

Notes

  • You can use ham or bacon instead of sausage.
  • Adjust the spice level by adding cayenne pepper.
  • This dish tastes better the next day.
