Description

Ingredients

  • Fresh lobster: 1 lb (about 450g), cooked and meat removed from the shell.
  • Spaghetti pasta: 8 oz (about 225g).
  • Garlic: 4 cloves, minced.
  • Cherry tomatoes: 1 cup, halved.
  • Olive oil: 4 tablespoons.
  • Red pepper flakes: 1 teaspoon (adjust to taste).
  • Fresh basil: 1/4 cup, chopped.
  • Lemon juice: 2 tablespoons (freshly squeezed).
  • Parmesan cheese: 1/2 cup, grated.
  • Salt and black pepper: to taste.

Instructions

  1. Prepare the lobster by boiling it in salted water for 8-10 minutes, then remove the meat from the shell and cut into bite-sized pieces.
  2. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente, reserving 1 cup of pasta water before draining.
  3. In a large skillet, heat olive oil over medium heat, add minced garlic, and sauté for about 1 minute until fragrant.
  4. Add halved cherry tomatoes and red pepper flakes to the skillet, cooking for another 3-4 minutes until the tomatoes soften.
  5. Combine the cooked spaghetti with the sauce in the skillet, adding reserved pasta water gradually until the desired sauce consistency is reached.
  6. Fold in the lobster meat, lemon juice, and half of the chopped basil, seasoning with salt and black pepper to taste. Cook for an additional 2-3 minutes until heated through.
  7. Serve immediately, garnished with remaining basil and grated Parmesan cheese, and drizzle with extra olive oil if desired.
