- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup cooked bacon bits
- 1/4 cup chopped green onions
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Scrub the potatoes and pierce them with a fork.
- Rub the potatoes with olive oil, salt, and pepper.
- Bake for 45-60 minutes, until tender.
- Let the potatoes cool slightly, then cut them in half and scoop out some flesh.
- Fill each half with cheese, bacon, and green onions.
- Return to the oven for 10-15 minutes until the cheese melts.
- Serve with sour cream on the side.
