Description

Crispy potato skins loaded with cheese, bacon, and green onions.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/4 cup sliced green onions
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes. Prick them with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Bake for 45 minutes or until tender.
  5. Let the potatoes cool slightly, then cut them in half and scoop out some flesh.
  6. Brush the insides with olive oil and bake for an additional 10 minutes.
  7. Fill each potato skin with cheese and bacon bits.
  8. Bake for another 5-7 minutes until cheese is melted.
  9. Top with green onions and serve with sour cream.
