Ingredients

- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon bits
- 1/4 cup sliced green onions
- 1/2 cup sour cream
- 2 tablespoons olive oil
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dry the potatoes. Prick them with a fork.
- Rub the potatoes with olive oil and sprinkle with salt.
- Bake for 45 minutes or until tender.
- Let the potatoes cool slightly, then cut them in half and scoop out some flesh.
- Brush the insides with olive oil and bake for an additional 10 minutes.
- Fill each potato skin with cheese and bacon bits.
- Bake for another 5-7 minutes until cheese is melted.
- Top with green onions and serve with sour cream.
Notes
- Use leftover baked potatoes for a quicker option.
- Feel free to add other toppings like jalapeños or olives.
