Description

A delicious meal featuring seasoned chicken, colorful vegetables, and smoky chipotle cream served over rice.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning
  • 1 cup corn, cooked
  • 1/2 cup black beans, drained
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • 2 tablespoons chipotle sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced chicken and fajita seasoning, cook until chicken is browned.
  3. Add bell pepper and onion, sauté until softened.
  4. Stir in corn and black beans, heat through.
  5. In a bowl, mix sour cream, chipotle sauce, and lime juice for the smoky chipotle cream.
