- 1/4 cup sour cream

Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced chicken and fajita seasoning, cook until chicken is browned.
- Add bell pepper and onion, sauté until softened.
- Stir in corn and black beans, heat through.
- In a bowl, mix sour cream, chipotle sauce, and lime juice for the smoky chipotle cream.
- Serve chicken mixture over rice, drizzle with chipotle cream, and top with cheese.
