Description

A flavorful and protein-packed plant-based taco filling made from lentils.


Ingredients

  • 1 cup lentils, rinsed
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a pot, combine lentils and vegetable broth. Bring to a boil.
  2. Reduce heat and simmer for 20-25 minutes until lentils are tender.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
  4. Add cooked lentils to the skillet with chili powder, cumin, smoked paprika, salt, and pepper.
  5. Cook for an additional 5 minutes, stirring occasionally.
  6. Serve in taco shells with your favorite toppings.
