Description
A delicious lemon rhubarb loaf with a sweet glaze.
Ingredients

- 1 cup rhubarb, chopped
- 1/2 cup lemon juice
- 1 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 cup powdered sugar (for glaze)
- 2 tbsp lemon juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix sugar and butter until creamy.
- Add eggs and vanilla extract, mix well.
- In another bowl, combine flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture.
- Fold in rhubarb and lemon juice.
- Pour batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let it cool before glazing.
- For the glaze, mix powdered sugar and lemon juice until smooth and drizzle over the loaf.
Notes
- Store leftovers in an airtight container.
- Great with tea or coffee.
- Adjust sweetness based on your preference.
