Description

A delicious lemon rhubarb loaf with a sweet glaze.


Ingredients

  • 1 cup rhubarb, chopped
  • 1/2 cup lemon juice
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 2 tbsp lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix sugar and butter until creamy.
  3. Add eggs and vanilla extract, mix well.
  4. In another bowl, combine flour, baking powder, and salt.
  5. Gradually add dry ingredients to the wet mixture.
  6. Fold in rhubarb and lemon juice.
  7. Pour batter into a greased loaf pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Let it cool before glazing.
  10. For the glaze, mix powdered sugar and lemon juice until smooth and drizzle over the loaf.
