- 2 boneless, skinless chicken breasts (about 1 lb or 450 g)
- 2 tablespoons olive oil (for marinating)
- 1/4 cup olive oil (for vinaigrette)
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 cups mixed salad greens (spinach, arugula, romaine)
- 1 cup halved cherry tomatoes
- 1 sliced cucumber
- 1/4 thinly sliced red onion
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup chopped walnuts or almonds (optional)
Instructions
- Marinate the chicken by mixing olive oil, lemon juice, lemon zest, oregano, garlic powder, salt, and pepper. Coat the chicken and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C). Let it rest before slicing.
- In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, and red onion. Toss gently.
- Assemble the salad by dividing the salad base among plates and topping with grilled chicken slices, feta cheese, and nuts if desired.
- Drizzle with lemon vinaigrette made from whisking olive oil, lemon juice, Dijon mustard, and honey or maple syrup. Season to taste.
Notes
- For extra flavor, let the chicken marinate for up to 2 hours.
- Assemble the salad just before serving to keep the greens crisp.
