Ingredients

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked quinoa
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, lemon juice, lemon zest, dill, garlic powder, salt, and pepper.
  3. Coat the chicken breasts in the mixture.
  4. Place the chicken on a baking sheet and bake for 25-30 minutes until cooked through.
  5. While the chicken cooks, prepare the quinoa according to package instructions.
  6. Once the chicken is done, let it rest for 5 minutes, then slice it.
  7. In serving bowls, layer quinoa, chicken, cucumber, cherry tomatoes, and avocado.
  8. Drizzle with extra lemon juice if desired.
