Ingredients

- 2 chicken breasts
- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 2 tablespoons fresh dill, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups cooked quinoa
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, lemon juice, lemon zest, dill, garlic powder, salt, and pepper.
- Coat the chicken breasts in the mixture.
- Place the chicken on a baking sheet and bake for 25-30 minutes until cooked through.
- While the chicken cooks, prepare the quinoa according to package instructions.
- Once the chicken is done, let it rest for 5 minutes, then slice it.
- In serving bowls, layer quinoa, chicken, cucumber, cherry tomatoes, and avocado.
- Drizzle with extra lemon juice if desired.

- Adjust seasoning to your preference.
- Can substitute quinoa with brown rice.
