A refreshing and light pasta salad featuring lemon and basil.
Ingredients

- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil, chopped
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 cup Parmesan cheese, grated
Instructions
- Cook the pasta according to package instructions.
- Drain and rinse under cold water.
- In a large bowl, combine pasta, tomatoes, and basil.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Sprinkle with Parmesan cheese before serving.
Notes
- Best served chilled.
- Can add grilled chicken for protein.
- Store leftovers in the fridge for up to 3 days.
