A refreshing pasta dish featuring lemon and asparagus.
Ingredients

- 8 oz spaghetti
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook spaghetti according to package instructions.
- In the last 2 minutes of cooking, add asparagus to the boiling pasta water.
- Drain pasta and asparagus, reserving 1/2 cup of pasta water.
- In a large skillet, heat olive oil over medium heat.
- Add garlic and sauté until fragrant.
- Add cooked pasta and asparagus to the skillet.
- Stir in lemon juice, lemon zest, and reserved pasta water.
- Mix in Parmesan cheese and season with salt and pepper.
- Serve immediately, garnished with additional cheese if desired.
Notes
- Use whole wheat pasta for a healthier option.
- For a vegan version, omit cheese or use a dairy-free alternative.
- Fresh lemon juice enhances the flavor.
