Description

A refreshing pasta dish featuring lemon and asparagus.


Ingredients

  • 8 oz spaghetti
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook spaghetti according to package instructions.
  2. In the last 2 minutes of cooking, add asparagus to the boiling pasta water.
  3. Drain pasta and asparagus, reserving 1/2 cup of pasta water.
  4. In a large skillet, heat olive oil over medium heat.
  5. Add garlic and sauté until fragrant.
  6. Add cooked pasta and asparagus to the skillet.
  7. Stir in lemon juice, lemon zest, and reserved pasta water.
  8. Mix in Parmesan cheese and season with salt and pepper.
  9. Serve immediately, garnished with additional cheese if desired.

Notes

  • Use whole wheat pasta for a healthier option.
  • For a vegan version, omit cheese or use a dairy-free alternative.
  • Fresh lemon juice enhances the flavor.
