Description
Korean Beef Bulgogi Tacos are a delightful fusion of Korean cuisine and traditional Mexican street food, featuring tender marinated beef wrapped in warm corn tortillas with fresh toppings.
Ingredients
- Beef: 500 grams (1 lb) of beef sirloin or ribeye, thinly sliced
- Soy Sauce: 1/4 cup
- Brown Sugar: 2 tablespoons
- Sesame Oil: 1 tablespoon
- Garlic: 2 cloves, minced
- Ginger: 1 teaspoon, grated
- Rice Vinegar: 1 tablespoon
- Gochujang: 1 tablespoon
- Corn Tortillas: 8 small, warmed
- Green Onions: 1/2 cup, chopped
- Kimchi: 1/2 cup, chopped
- Toasted Sesame Seeds: 1 tablespoon
- Lime Wedges: for serving
Instructions
- Prepare the marinade by mixing soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, and gochujang in a bowl.
- Add the thinly sliced beef to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes.
- Heat a large skillet over medium-high heat and add vegetable oil. Add the marinated beef in a single layer and cook for 3-4 minutes until browned and caramelized.
- While the beef is cooking, warm the corn tortillas in a separate skillet for about 30 seconds on each side.
- Assemble the tacos by placing cooked beef in the center of each tortilla, topping with green onions and kimchi, and sprinkling with toasted sesame seeds. Serve with lime wedges.
Notes
- Marinate the beef for at least 30 minutes, but up to 2 hours for deeper flavor.
- Avoid overcrowding the pan when cooking the beef to ensure proper searing.
- Warm tortillas before assembling to prevent breaking.
- Experiment with toppings for added flavor and texture.
