Description

Korean Beef Bulgogi Tacos are a delightful fusion of Korean cuisine and traditional Mexican street food, featuring tender marinated beef wrapped in warm corn tortillas with fresh toppings.

Ingredients

  • Beef: 500 grams (1 lb) of beef sirloin or ribeye, thinly sliced
  • Soy Sauce: 1/4 cup
  • Brown Sugar: 2 tablespoons
  • Sesame Oil: 1 tablespoon
  • Garlic: 2 cloves, minced
  • Ginger: 1 teaspoon, grated
  • Rice Vinegar: 1 tablespoon
  • Gochujang: 1 tablespoon
  • Corn Tortillas: 8 small, warmed
  • Green Onions: 1/2 cup, chopped
  • Kimchi: 1/2 cup, chopped
  • Toasted Sesame Seeds: 1 tablespoon
  • Lime Wedges: for serving

Instructions

  1. Prepare the marinade by mixing soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, and gochujang in a bowl.
  2. Add the thinly sliced beef to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes.
  3. Heat a large skillet over medium-high heat and add vegetable oil. Add the marinated beef in a single layer and cook for 3-4 minutes until browned and caramelized.
  4. While the beef is cooking, warm the corn tortillas in a separate skillet for about 30 seconds on each side.
  5. Assemble the tacos by placing cooked beef in the center of each tortilla, topping with green onions and kimchi, and sprinkling with toasted sesame seeds. Serve with lime wedges.

Notes

  • Marinate the beef for at least 30 minutes, but up to 2 hours for deeper flavor.
  • Avoid overcrowding the pan when cooking the beef to ensure proper searing.
  • Warm tortillas before assembling to prevent breaking.
  • Experiment with toppings for added flavor and texture.
