Description

A hearty low carb white chicken chili perfect for keto diets.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 can (15 oz) white beans, drained
  • 1 cup chicken broth
  • 1 cup unsweetened almond milk
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup cream cheese
  • 1/4 cup chopped cilantro

Instructions

  1. In a pot, sauté onion and garlic until soft.
  2. Add shredded chicken, white beans, chicken broth, and almond milk.
  3. Stir in cumin, chili powder, salt, and pepper.
  4. Bring to a simmer and cook for 10 minutes.
  5. Add cream cheese and stir until melted.
  6. Remove from heat and stir in cilantro before serving.
