Ingredients

- 2 cups cooked shredded chicken
- 1 can (15 oz) white beans, drained
- 1 cup chicken broth
- 1 cup unsweetened almond milk
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup cream cheese
- 1/4 cup chopped cilantro
Instructions
- In a pot, sauté onion and garlic until soft.
- Add shredded chicken, white beans, chicken broth, and almond milk.
- Stir in cumin, chili powder, salt, and pepper.
- Bring to a simmer and cook for 10 minutes.
- Add cream cheese and stir until melted.
- Remove from heat and stir in cilantro before serving.
Notes
- Adjust spices to taste.
- Can be topped with avocado or cheese.
- Store leftovers in the refrigerator for up to 3 days.
