A creamy and healthy keto crockpot broccoli soup.
Ingredients

- 4 cups of chopped broccoli
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup cheddar cheese, shredded
- Salt and pepper to taste
Instructions
- Place chopped broccoli, onion, and garlic in the crockpot.
- Add vegetable broth and stir to combine.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Blend the soup until smooth using an immersion blender.
- Stir in heavy cream and cheddar cheese until melted.
- Season with salt and pepper before serving.
Notes
- Adjust thickness by adding more or less broth.
- Use fresh or frozen broccoli.
- Store leftovers in the refrigerator for up to 3 days.
