A low-carb version of traditional beef enchiladas, perfect for a keto diet.
Ingredients

- 1 lb ground beef
- 1 cup shredded cheese
- 1/2 cup onion, diced
- 1 can enchilada sauce
- 1/2 cup bell pepper, diced
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 large lettuce leaves
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, brown the ground beef with onions and bell peppers.
- Add garlic powder, cumin, salt, and pepper. Mix well.
- Take a lettuce leaf and fill it with the beef mixture.
- Sprinkle cheese on top and roll the leaf to form an enchilada.
- Place enchiladas in a baking dish and pour enchilada sauce over them.
- Bake for 20 minutes until heated through and cheese is melted.
- Serve hot.
Notes
- Use your favorite cheese for added flavor.
- Adjust spices according to your taste.
- Can substitute ground turkey for a lighter option.
