Description
A refreshing salad combining kale, apples, and lime dressing.
Ingredients
Scale
- 4 cups kale, chopped
- 2 apples, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup walnuts, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine kale, apples, red onion, walnuts, and feta.
- In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or chill for 30 minutes before serving.
Notes
- Use any variety of apples for sweetness.
- Adjust lime juice to taste.
- Can be stored in the fridge for up to 2 days.
