Ingredients

  • Ground beef: 500 grams (1 lb)
  • Onion: 1 medium onion, finely chopped
  • Garlic: 3 cloves, minced
  • Fresh parsley: 1/4 cup, finely chopped
  • Fresh mint: 1/4 cup, finely chopped
  • Ground cumin: 1 teaspoon
  • Ground coriander: 1 teaspoon
  • Paprika: 1 teaspoon
  • Salt: 1 teaspoon
  • Black pepper: 1/2 teaspoon
  • Olive oil: 1 tablespoon
  • Skewers: 4-6

Instructions

  1. In a large bowl, combine the ground beef, onion, garlic, parsley, mint, cumin, coriander, paprika, salt, and black pepper. Mix well.
  2. Divide the mixture into 6 to 8 equal portions and shape each into elongated cylinders around the skewers.
  3. Preheat the grill or grill pan over medium-high heat and brush with olive oil. Cook the kofta for 4-5 minutes on each side until browned and cooked through.
  4. While the kofta rests, prepare the yogurt sauce by mixing yogurt, grated cucumber, minced garlic, lemon juice, and salt in a bowl.
